In it, several high-end hotel chains, most notoriously the Four Seasons resort, and developers plan to turn this region into a model tourism center where environment and development can coexist. There is one thing left out in their project brochure which is that any and all development will be dependent on the excellent Papagayo fishing the region offers.

This is a fishing technique mostly for the many wonderful billfish species like Marlin, Sailfish, Swordfish, and even some Roosterfish although you are more than welcome to keep species like a dolphin (dorado) or Mahi Mahi, yellowfin tuna, snapper, and other species.
Tuna, dorado, snapper, and other abundant species make for a fine fresh seafood meal that you can have cooked at a local restaurant for yourself and your party.
The best thing to do is just ask the Captain what you may keep, what is the best fish for the table. Your Captain or mate will help you clean the fish to get it ready for the dinner table.
